Raw and cooked.

Crudo e cotto is Italian for raw and cooked — the two halves of a good pizza: San Marzano tomato and fior di latte that go in raw, a crust that comes out of the oven blistered. Crudo e Cotto is a pizza van that parks outside Netto three evenings a week, from five until half past seven: twice at Strøby Egede on the coast road, once in Køge, on Toldbodvej.

The board is short. A Diavola with spianata salami and ’nduja for those who like it hot; a Margherita with basil and extra virgin olive oil; and a Mortadella e Pistachio — mascarpone and fior di latte under the mortadella, pistachio pesto and whole pistachios on top. At the end of October the van added something for the queue: a pot of Italian hot chocolate on the counter, free — polite self-service, as the van puts it: you make the cocoa yourself. The chalkboard that says so is printed here exactly as it was chalked.
