Gancio Pastaria.
Handmade pasta on Vestergade. Opened in March 2026, sold out before anyone had reviewed it, and still the hardest table in town — lunch is the easier one.

The story
Sold out before the reviews.
Gancio opened on Vestergade on Thursday 12 March 2026 with about sixty guests on the first night. By the weekend the bookings were gone, and the restaurant had a waiting list before it had a reputation. The local paper ran the story a week later under a headline that said everything: new pasta restaurant, sold-out bookings.
The chef-owner is Theis Krogh Hansen — twenty years in Copenhagen kitchens, latterly head chef at Trattoria Fiat by Kongens Nytorv, and now a few minutes’ walk from home in Nørremarken. The kitchen does classic Italian and handmade pasta, every day, no shortcuts: upretentiøst, klassisk, autentisk italiensk køkken, as the house puts it. Gancio is Italian for hook — the thing you hang a sign on.

The sign.
The photograph is the sign outside Gancio on an ordinary afternoon. On this site it is printed as a negative: every tone inverted before the dither, so the black sign comes out pale, the lettering ultramarine, and a cloudy day turns into the night the restaurant actually lives in.
At the top of this page it is the opposite trick — the sign exactly as shot, cut out, and the street behind it re-printed as a halftone.
