From La Glace to Nørregade.

Sara Henriksdottir Joensen trained as a chef, found that the sweet side of the kitchen was the one she loved, and changed direction: in recent years she has baked at some of the best-known konditorier in Denmark — La Glace and Hotel d’Angleterre among them — been on the national team and competed in a European championship in chocolate. Now she bakes her own cakes in the konditori on Nørregade, as the local paper put it on 11 October 2026. On the slate in the photograph: a domed mousse cake, a pink-and-yellow slice under piped roses, a lemon tart crowned with meringue, a chocolate slice under piped ganache and a little cake under a cloud of cream.

The name is the programme — Konditoriet, Tapas og Vin: the counter of cakes, then the tapas and the wine. For Smag på Køge the house goes further and serves a whole dinner in two seatings — salmon tartare with avocado and rye-bread crisps, whole-roasted veal culotte with mushroom cream, panna cotta with fresh berries — for 249 DKK. The photograph is printed here in the house’s own technique: the shopfront piped onto the blue in white rosettes, the chef and her cakes left exactly as they are.
