Organic Market is a bakery and food market with no one behind the counter, because there is no counter. The door on Vestergade opens for the app from seven in the morning to eleven at night, every day; you pick, pay on the tablet by the door and let yourself out. Nynne Daa and Rasmus Kastrup started with a sourdough bakery on wheels in 2021, opened their first shop in Hedehusene in 2023 and now run ten — one of them a farm shop at Vittenbjerggård in Bjæverskov, ten minutes west of here. The Køge shop opened in the spring of 2025; the local paper’s headline on day one was that it had been run over.
The sourdough and the pastries come in from the bakery in Solrød every morning; the rest of the shelves — ready meals, cheese, charcuterie — are picked from about twenty Danish organic producers. The photograph is the breakfast version: a sesame roll, two slices of cheese, butter in a jar, a coffee.
